Hire Servers Who Smile - If you haven't learned by now, the behavior you see during the interview is often the employee at their best. They're putting their best foot forward and you're rarely going to see a consistent display of what you're getting in the interview. With that said, if they're smiling during the interview then don't bother. You can't teach smiling, people have to want to smile.
